Spicy Chicken Bowtie with The Dude

Basic Pesto:
 
1 4oz. pkg. fresh basil (washed and stemed)
12+ cloves fresh garlic (remove the hard kernel at the top of the clove)
1-1/2 cups ex. virgin olive oil
2/3 cup grated parmesan
2/3 cup pine nuts or walnuts
1 tsp. sea salt
1 tsp. cracked black pepper
1/2 cup water
 
Rinse and stem the basil, add all ingredients to blender or food processor, and process to desired consistancy.
 
 
Spicy Chicken Bowtie Pasta:
 
1-1/2 cups pesto
1/2 lb boneless, skinless chix breast (season w/ o.oil, lemon juice, season salt, and b.pepper.)
1/2 bunch cilantro
2+/- tblsp. Sambal Oelek chili paste
1/2 lb. organic bowtie pasta
 
Start pasta to boil(salt water if desired), prep and marinate chicken, chop or incorperate cilantro into pesto w/blender or food processor, sear chicken in saute pan w/ a little o.oil(set aside), drain pasta(rinse if needed) and add to large mixing bowl, dice chicken and add to bowl w/all remaining ingredients, mix well and serve..(Serves 3-6 depending on portion size)
 
* Options: There are many options for this recipe
Substitute shrimp or sausage for chix.
Veg. only w/broccoil,carrots,cauliflower,gr.beans,mushrooms etc.
