National Corn on the Cob Day is June 11 at solita Tacos and Margaritas in Huntington Beach

June 11 is National Corn on the Cob Day and no culture has embraced corn more than the Mexican culture. Anything corn-based is loved by the Mexican food fan, whether it is the humble corn tortilla, the hominy in posole and menudo or the huitlacoche (corn fungus) that is often described as a Mexican truffle. At solita Tacos and Margaritas in Huntington Beach, Chef Deborah Schneider, author of six cookbooks on Mexican and Baja California cuisine, has created several dishes for National Corn on the Cob Day.

The sophisticated Baja-style Mexican dining destination features this sweet summertime vegetable (which is actually considered a grain and a fruit as well) grilled to perfection by Executive Chef Deborah Schneider. The Grilled Corn Elote is a whole ear of corn roasted over a wood grill and smothered in butter, chipotle salsa, California chiles, Cotixa cheese and sprinkled with green onion.

Since the day is dedicated to this tasty yellow husker, why not indulge in a few more bites? Although not on the cob, you can find these juicy kernels in the Grilled Carne Asada & Esquites Salad of mixed greens topped with grilled carne asada, roasted and grilled sweet corn esquites, Cotixa cheese, chipotle sauce, tomatoes, avocado and crispy crumbled corn tortillas.
