June 11 is National Corn on the Cob Day and no culture has embraced corn more than the Mexican culture. At solita Tacos and Margaritas in Huntington Beach, Chef Deborah Schneider, author of six cookbooks on Mexican and Baja California cuisine, has created several dishes for National Corn on the Cob Day.
The sophisticated Baja-style Mexican dining destination features this sweet summertime vegetable (which is actually considered a grain and a fruit as well) grilled to perfection by Executive Chef Deborah Schneider. The Grilled Corn Elote is a whole ear of corn roasted over a wood grill and smothered in butter, chipotle salsa, California chiles, Cotixa cheese and sprinkled with green onion.
